Ingredients

 

  • 3 tbs olive oil
  • 1 medium onion, diced
  • 2 clove garlic, minced
  • 1 tbs cumin
  • 1 tbs coriander
  • 1 tbs chili powder
  • 1 tbs paprika
  • 1 tbs dried oregano
  • 2 lb lean ground beef
  • 2 tbs tomato paste
  • 1/2 cup beef broth or stock
  • 1 cup cooked quinoa
  • 1/2 cup corn
  • 1 can black beans, drained and rinsed
  • 1 jalapeño, sliced
  • 1/2 cup of salsa
  • 3 oz cream cheese
  • 12 soft corn tortillas
  • nonstick spray or butter
  • 1 cup shredded cheese
  • 1 lime, juiced and zested
  • Garnished with fresh herbs, more lime, and freshly grated cheese

Step by Step Instructions

Step 1

Preheat oven to broil setting. Heat large dutch oven over medium high heat.  Add olive oil and onions.  Sauté until translucent and golden. Add garlic and sauté until fragrant—approximately one minute.

Step 2

Add Bloom your spices. Add each of your spices to the pan and stir until combined. Add ground beef seasoned with salt and pepper. Break up into small pieces and cook through.

Step 3

Add tomato paste and stir into mixtures for two minutes until a deep red color. It’s helpful to spray some nonstick on it so it won’t stick to your pan. 

Step 4

Deglaze: Add beef stock and use a wooden spoon to scrape up the good flavorful bits off the bottom of your pan. You may need to add more beef stock, depending on the fat content of your meat, so have a little extra on hand. 

Step 5 

Add cream cheese, salsa, corn, jalapeño, and quinoa. Stir to combine.

Step 6

Top with a layer of 6 corn tortillas arranged in an overlapping pattern. Spray them with nonstick or butter to give them a little mobility. Place a layer of cheese on top.  Stick under the broiler until cheese has melted, approximately 2-3 minutes.   Remove from oven.

Step 7

Add another layer of tortillas on top of the melted cheese in same arrangement. Again, spray the top with nonstick or coat with butter to help brown. Broil for 1-2 minutes (you can also bake at 350 for 8-10 minutes instead of broil). 

Step 8

Garnish with fresh herbs, lime zest, lime juice, and more freshly shredded cheese if you are a cheesehead like yours truly.
