Ingredients

– 3 chicken breasts, cooked and chopped
– 2 tbs curry powder
– 1/2 cup golden raisins
– 1/4 cup dried currants
– 2 stalks celery, diced
– 1 shallot, finely diced
– 1/2 jalapeño, diced
– 1 cup mayonnaise

Step by Step Instructions

Step 1
For the chicken, you can bake, poach, or grill it. I seasoned mine with lots of curry powder and cooked in the sous vide with olive oil.  You can also take a shortcut and use rotisserie chicken.  Whatever you like!
Step 2
In a large mixing bowl, combine chicken, vegetables, dried fruits, and mayonnaise. Season with salt and pepper. Garnish with chopped herbs.  Serve over mixed greens or toast.
