Creamed Spinach Mashed Potatoes

Ingredients
– 4 cups Yukon gold potatoes, peeled and cubed
– 1/3 cup stock
– 4 tbs butter
– 4 oz mascarpone cheese
– Salt & pepper to taste
– 1/2 onion, thinly sliced
– 2 cloves garlic, minced
– 1/4 tsp chili flakes
– 5 cups baby spinach or mixed greens
– 3 oz cream cheese
– 1/3 cup stock
– 4 tbs butter
– 4 oz mascarpone cheese
– Salt & pepper to taste
– 1/2 onion, thinly sliced

– 3 oz cream cheese
Step by Step Instructions
Step 1
Boil potatoes in salted water until fork tender. Once cooked, drain and return to pot; add stock, 3 tbs butter, mascarpone cheese. Mash or whip until smooth and creamy. Season with salt and pepper.
Step 2
In a large skillet over medium-high heat, sauté onions in 1 tbs of butter until translucent. Add chili flakes and garlic, stir for 1 minute. Add greens and cook down until wilted. Finish with cream cheese (or mascarpone) and allow to melt.
Step 3
Mix greens into potatoes. Taste, season, and serve.
