Honey Lemon Artichoke Dip with Dried Cherries

Ingredients
– 4 whole artichokes, steamed or 1/2 cup chopped jarred artichokes
– 8 oz mascarpone cheese (substitute cream cheese, goat cheese, or combo)
– 1/4 cup dried cherries, chopped
– 1 lemon, juiced and zested
– 2 tbs honey
– chopped fresh parsley and chives
– Salt and pepper to taste

Step by Step Instructions
Step 1
If using whole artichokes, trim one inch off the top and bottom. Place on a wire rack stem side up in a pot with approximately 2 inches of water and steam for 30 minutes or until the stem is tender. Once cooked, remove leaves one at a time. Using the back of a kitchen knife, gently scrape the edible “meat” from each leaf and place in a bowl. Once you get to the heart of the artichoke, cute the fuzzy choke off. Chop the heart and add to the bowl. If you want a shortcut, buy jarred or canned artichokes and chop.
Step 2
In a medium sized bowl, whip mascarpone cheese with a fork or whisk. Add artichoke hearts, cherries, the juice/zest of one lemon, and honey. Gently mix together, taste, and season with salt and pepper.
Step 3
Form cheese into a ball shape. Garnish the outside with more cherries, freshly chopped herbs, and a honey drizzle.
Step 4
Recommended to be served with a heartier cracker, such as Triscuits, to give nice texture.
