InstantPot Sweet Potatoes with Compound Herb Butter

– 2 large sweet potatoes
– 1 cup water
– 2 tbs butter, room temperature
– 3 tbs freshly chopped herbs
– salt and pepper to taste

Step by Step Instructions
Step 1
Stab potatoes with a fork all around. Place the wire trivet rack that comes with your InstantPot at the bottom of you pot. Add 1 cup of water. Place potatoes on rack and cook on high pressure for 16 minutes (mine were about 3/4 lb each). Allow natural release for 5 minutes, then quick release.
Step 2
Whip room temperature butter with freshly chopped herbs. I used purple basil, cilantro, dill and chives, but you can use any soft herbs you have on hand. Season with salt and pepper. Put in fridge to harden, if desired.
