Ingredients
– 2 tbs butter
– 2 tbs olive oil
– 1 bundle green onions, sliced and separated green from whites
– 2 tbs grated ginger
– 3 cloves garlic, minced
– 1/2 cup chopped red cabbage
– 1 tbs umami powder
– 1 tsp garlic powder
– 1 tsp ginger powder
– 1/2 tsp sriracha seasoning
– 4 eggs
– 3 cups cooked white or brown rice
– 1/4 cup soy sauce
– 1/2 tsp fish sauce
– 1 tbs rice vinegar
– 1 lb langostino tails, cooked
– Sesame seeds for garnish
– Salt & pepper to taste

Step by Step Instructions
Step 1
Using a large skillet over medium heat, sauté the whites of green onions in olive oil and butter for 2 minutes. Add grated ginger, garlic, and all spices. Stir for another 1-2 minutes. Toss in the cabbage.
Step 2
Crack all 4 eggs into pan and stir. You can add more fat if needed to help prevent sticking. Once eggs have cooked, add rice and stir to fully incorporate. I add tons of black pepper to my fried rice at this point.
Step 3
Pour in soy sauce, fish sauce, and rice vinegar. Shut off heat. Use a wooden spoon to scrape any starchy bits off the bottom of your pan. If you prefer more soy, add more just be cognizant of salt level.
Step 4
Once rice is heated through and well combined, add cooked langostino tails. Taste and salt at the end. Finish with more butter if you’re feeling yourself (and you should be). Garnish with the greens of your green onions and sesame seeds.
