Step by Step Instructions
Step 1
PREP: Preheat oven to 350°F. Line a baking sheet with a Silpat or parchment paper. Gather wire rack, mixer with whisk attachment, and large bowl for dry ingredients.
Step 2
WET: Using a stand mixer, beat butter and sugars on medium speed until fluffy and combined. Add pumpkin puree, vanilla, and one egg at a time. Beat on low speed until combined.
Step 3
DRY: Sift 4 cups of flour into a large bowl. Add baking powder, baking soda, salt, and spices and whisk together to combine. Add dry ingredients to wet ingredients in three batches, mixing on low. Once all ingredients have been added, gently fold in chocolate chips with a rubber scraper.
Step 4
BAKE: Using a cookie scoop for uniformity, bake cookies in batches of 12 for 12 minutes. Allow to cool on wire rack. These cookies are soft, almost like a muffin top, so when packaging and storing, be sure to line layers with parchment paper to prevent sticking.
